How was your weekend? Mine was perfect! Friday night we unpacked a lot of boxes and now the kitchen is done! Working out perfect, since I spent Saturday in the kitchen cooking! We had a few wonderful friends over for dinner, resulting in an excellent evening that continued on until the weeee hours of the morning. I thought I would share 2 of the courses with you. As a starter I made a Watermelon Gazpacho. Seriously, if I may, it was delicious! Super summer food!
And for dessert we had Chocolate Mousse. I love chocolate. So again, if I may, melt in your mouth good. I love to cook I just wish I was able to spend more time in the kitchen. Anyhow if you are interested in trying either one of the courses this is what I did:
Watermelon Gazpacho (all about raw food)
3 cups of seeded watermelon blended
2 cups of watermelon diced
2 medium tomato seeded and diced
2 cups of seeded and peeled cucumber diced
1 red bell pepper diced
1 tsp minced ginger
1/2 a seeded and minced jalapeno (if you like spicy go for it)
Handfull of fresh cilantro leaves
Juice from one lime
Lime peel from one lime
a little salt
a little fresh ground pepper
Just mix it all together and place in the refrigerate to chill.
Chocolate Mousse (easy, easy, easy)
100g (3.5 ounces) dark fine chocolate
3 dl (1.3 cups) heavy cream
2 egg yolks
fine white & dark chocolate to decorate
Melt the chocolate. I like to do so in a bowl over a pot of boiling water. Whip the cream but not hard. Put aside about 1/2 of the whipped cream. Mix the 2 egg yolks into the chocolate. Now fold the chocolate into the whipped cream and mix. Now mix in the rest of the whipped cream.
Pour the Mousse into small individual bowls or cups. Place in the refrigerate for 4 hours (or more). After 2 hours (or anytime prior to serving) Chop up the white and dark chocolate and sprinkle lightly on top. Add a few berries. Enjoy!
