I have decided that once in a while I am going to have theme weeks here on simple blueprint. In the future you will find design week, travel week, photography week and maybe even wedding week but to start off I wanted to inspire you to cook. During Lets Eat Week you will find posts filled with delicious, summer infused bites! If I do my job right you will end up in the kitchen making something tasty. Maybe you will find a new blog, be inspired by a photo or find a recipe that makes your mouth water. One thing that I can almost guarantee is that you will end up hungry!
It is quite ironic that I am making this week Lets Eat Week since I ate so much this past Friday. I seriously felt like I never wanted to eat again. My plan is to post vegetarian bites that will inspire me (and maybe you) to eat well all summer long. I want to take advantage of all the beautiful and colorful yumminess that this season has to offer! Lets say 90% healthy and 10% not so healthy. My goal is to always eat 90/10. It is easier said than done...
To start the week off I spent some time over at Martha Stewart checking out her 60 days of summer, it left me feeling very hungry. I rarely follow recipes (only when I bake), I just let photos inspire me. And these photos inspire me! How delicious are tomatoes during the summer? I love the smell of ripe summer tomatoes. And how about a Watermelon & Feta Salad for lunch?
Or maybe a Quick Cucumber salad tossed up as a light side dish? And how pretty are these Striped Ice Pops? They are made of a mix lemonade, raspberries, greek yogurt. That is a snack that I could go for on a hot Sunday afternoon.
